I love a good stir fry. It’s easy, quick and can be jam packed with goodness! I like to sneak in a few extra ingredients my picky children (and husband) normally avoid. Such as flaxseed and spinach – two “superfoods” that should be in everyone’s diet.
Today, I put this together on a whim and was delighted with how it turned out! Tasty, warm and leaves you feeling like life sure is beautiful! So if you want to have a go at this recipe yourself, here’s how to do it:
Preparation Time: 5 minutes
Cooking Time: 8 Minutes
Serves 4.
400g Diced Beef
1/2 Brown Onion
1 Garlic Clove
1/3 cup mixed peppers
1/3 cup sliced mushrooms
1/3 cup spinach
A generous handful of beansprouts
1/3 cup Dark Soy Sauce
1 Tbsp Sugar
1 Tsp Sesame Seeds
1 Tbsp Organic Ground Flaxseed
500g Egg Noodles
1 Tbsp Vegetable oil
Method:
Heat the oil on high heat in a frying pan, toss in the beef and cook for 2-3 minutes turning over the meat until all sides are brown.
Turn the heat down to medium and add finely chopped garlic and onion to the beef. Use a spatula to keep turning for 1 minute.
Once the the onion has shrunk in size and gone brown, add mushrooms, mixed peppers and spinach to the pan, tossing regularly for a further 2 minutes.
Throw in the beansprouts and keep tossing on medium heat until the vegetables shrink and the beansprouts are tender.
Now for the sauce: Combine the Soy Sauce, Sugar and ground flaxseed and pour over the stir fry. Turn the heat down to low.
Cook for 1-2minutes until the sauce begins to bubble.
Add to your heated egg noodles on a plate and sprinkle the sesame seeds on top to finish.
